Item Probing the synergistic effects of rutin and rutin ester on the oxidative stability of sardine oil(Springer, 2022) Chandrasekar, V.; Arunachalam, S.S.; Hari, H.; Shinkar, A.; Belur, P.D.; Iyyaswami, R.Multicomponent antioxidant mixture is proved to be highly effective in imparting oxidative stability to the edible oil. It is believed that the high efficacy of those mixtures is due to the synergistic effect exhibited by two or more components. The current study aims to analyse the synergistic effect of a flavonoid and its corresponding ester in improving the oxidative stability of n-3 PUFA rich sardine oil. The oxidative stability of rutin, esterified rutin and their combinations at three different concentrations was studied in sardine oil stored at 37 ºC for 12 days in contact with air under darkness. The combination of rutin and rutin ester showed maximum reduction of 54.2% in oxidation at 100 mg/kg and 150 mg/kg. Perhaps this is the first report on the synergistic effect of a flavonoid and its lipophilized ester for improving the oxidative stability of n-3 PUFA rich oil. © 2022, Association of Food Scientists & Technologists (India).Item Studies on the physical properties of the Three-Liquid-Phase System of n-Hexane-ethanol-NaH2PO4-water(Institution of Chemical Engineers, 2025) Shanbhag, C.C.; Iyyaswami, R.; Belur, P.D.The physical properties, density, viscosity, and refractive index of equilibrated phases of the Three-Liquid-Phase System (TLPS) formed by n-Hexane+ethanol+sodium dihydrogen phosphate (NaH2PO4) +water were determined at 303.15 K and analysed as a function of change in concentration of individual phase forming components. The ternary plots were plotted to locate the shift in three-phase region with variation in system components. It was observed that the increase in total concentration of both ethanol and NaH2PO4 in a system showed a reduction of density and viscosity in the middle phase and was found to increase in the top and bottom phases; however, the refractive index of all three phases was increased. The effect of change in concentration of n-Hexane was observed to be different, like the density and viscosity of top and middle phases were found to decrease with increasing concentration of n-Hexane, and both the properties were found to increase in the bottom phase. In contrast, the refractive index of the top and bottom phases decreased with increasing concentration of n-Hexane. The influence of tie line lengths (TLL), which indicates the equilibrium characteristics between the phases, on the interfacial tension between the phases was also studied. © 2024 Institution of Chemical Engineers
